Wedding food in India has evolved from a simple meal to the
greatest show of creativity; the wedding menu has become
a point of discussion pre- and post-wedding and food tastings
to fi ne tuning the menu are more common than ever.
MODERN TWIST Chefs are getting creative with wedding food
and are beginning to offer dishes which were never seen on
the menu before. After all, they are catering to well-travelled,
socially aware clients with a refi ned palate. Innovative
techniques, international cuisines, regional foods, and modern
Indian delicacies are fi nding a place on the buffet. Live stations
retain their popularity owing to the hors d’oeuvre appetisers
dispensed piping hot. In winter months, barbecues, kormas,
qaliya, and rich salans with warm breads are recommended
as part of the menu, apart from a plethora of western live
grills, pasta, and paella stations.
POPULAR TREAT The current trend at weddings is to have
a signature restaurant label cater to the event. With
a restaurant kitchen replica and a dedicated a-la-carte menu,
these restaurants are becoming very popular. Some clients
also demand a complete village setup wherein guests can
walk into a restaurant of their choice and have a signature
meal or a complete fi ne dining experience.
