Taking full advantage of its 45 acres
effectively, Park Hyatt Goa Resort and
Spa grows a variety of organic herbs
and vegetables. What they cannot
produce on site is sourced locally,
greatly reducing their carbon
footprint. Working in total symbiosis,
the hotel then recycles its waste to
compost to use at the farms. But why
just take our word for it? Go visit and

guided tour, complete with your very
own horticulture expert.
n HYATT REGENCY VANCOUVER
This gorgeous hotel’s approach to
green initiatives is simple: donate,
recycle, and outsource. Anything
in excess and in good condition is
donated to shelters; its seafood
sourcing partnership with Oceanwise
ensures the production of pro-ocean
seafood. For instance, confit octopus
and poached side striped shrimp
served at the Mosaic Grill are made of
sustainably-caught octopus and
shrimp respectively. Plus, the entire
premises is powered by Canada’s
leading renewable energy provider.
n GRAND HYATT NEW YORK
This property took on the NYC Carbon
Challenge, dropping $2.3 million on a
new building management system
that balances the use of heat and
air-conditioning. This, in combination
with an overhauled ventilation and
electrical system, slashes its carbon
footprint by 2,400 metric tonnes a
year. Additionally, they compost all
hotel cafeteria waste, source local
ingredients, have replaced bottled
water with still water at the in-house
Grand Club, and give complimentary
digital access to the New York Times
and the Financial Times, instead of
physical newspapers.
n HYATT ZIVA CANCUN
Ziva is the first Hyatt property in
Mexico to receive Green Globe
certification, which requires an
extensive list of do’s. But, by running
social empowerment projects such as
Epiphany Caravan that brings toys to
children, conducting annual fund
raising events to support local
organisations, and running
awareness campaigns, the hotel has
set an example for luxury chains. ▪
HYATT 2020 VISION
Taking water conservation very seriously,
the group aims to reduce its consumption
by as much as 40 per cent in some
of its hotels. It aims to reduce energy
consumption and greenhouse gas
emissions by 25 per cent per square
metre. Visitors can expect massive design
changes in its building structures too,
with a focus on environmentally-
sustainable and nature-friendly design.
