“We’d love to settle down

in New York. The energy

there is different and the

food scene has everything—
from simple food trucks,
to amazing cocktail

bars, casual cafes,

and the most innovative

fi ne dining experiences.”

Spinning Tales

In our year-end party special,

we meet hospitality hotshots who

LOCATION COURTESY TOWNHALL, GURUGRAM

RANDEEP AND

NAVNEET BAJAJ

The restaurants under Ambrosia
Hospitality—Town Hall, Public Affair,
Amour Bistro, and Mr Choy—have made
a wave in Delhi and the fi rebrands have
their hands full. Randeep handles the
overall operations, while Navneet, who
holds a degree in Fashion and Textile Design
from the Instituto di Europeo in Milan, is
in charge of the details. The power couple
is always on-the-go, fi nding inspiration for
these restaurants from their travels.
RECOMMENDATIONS Chef Augusto’s
signature sushi rolls and hand rolls
at Town Hall (town-hall.in); wood fi red
pizzas and cheesecakes at Amour Bistro
(amour-bistro.in); scallop and prawn
dim sum at Mr Choy (mrchoy.in);
kale and halumi salad at Public Affair
(public-affair.in).
MEMORABLE HOLIDAY For Randeep,
it would be Bora Bora, in French Polynesia
where he stayed at the Four Seasons.
MEMENTO Navneet likes to bring back
maps with the markings made by them
or the hotel concierge or locals who give
directions on the way. “I frame them and
put them up in the house,” she says.
DREAM TRIP A road trip across two
continents—somewhere between Central
Asia and Eastern Europe.
NEXT TRIP Cape Town in December to
celebrate his parents’ anniversary.
