All-day dining just got a leg up with the opening
of Alley On 25, the spanking new Andaz hotel’s
seven-in-one dining concept that reinterprets street-side
dining in posher fashion. It’s the flagship eatery of this
hipper, luxe sister property of the Hyatt group. Spread
across the 25th storey of the hotel, the five restaurants,
one bar and a lounge all segue into one another via
chic walkways that mimic the feel of strolling through
the alleyways of an enclave.
But you won’t find the likes of nasi padang, curries,
or quintessential hawker dishes here. The hotel has

eschewed these offerings since time-honoured renditions
can be found along the streets right outside its doors in
the surrounding Kampong Glam and Bugis area.
Rather, the concepts run the gamut from classic
Chinese with a Sichuan twist and modern Asian
barbecue cooked over charcoal, to elegant desserts
inspired by Singaporean flavours. The hotel’s chef de
cuisine Raj Kumar oversees Alley on 25, guided by
executive chef Soren Lascelles.
