IVIDE COOKER
The app-controlled unit is
designed to eliminate
overcooking risks
Sous Vide Tools has introduced
the iVide Cooker, an app-controlled
appliance which is designed to heat
food to the perfect temperature every
time, said to avoid overcooking. The
cooker functions by placing food inside
a vacuum-sealed bag then, using the
adjustable clamp, attaching this to a pot
or saucepan of up to 20litres in capacity
and setting the time and temperature
via the iVide app, which is loaded with
more than 600 recipes. The unit heats
to temperatures between 0°C to 90°C
with an accuracy of 0.1°C and will heat
and circulate the water in the pan at
rate of 8litres per minute, which should
eliminate any hot or cold spots. A
calculator feature lets the user select the
weight of the food and the required level
of ‘doneness’ – the iVide Cooker should
do the rest in virtual silence, providing
both audio and visual notifications at the
end of the set cooking time, at which
point the chef removes the food from
the pouch and finishes it in a hot pan.

CHARVET PRO 900 SERIES BOILING PAN
Latest powerful additions designed to save kitchen space
Charvet has introducing a new powerful 28kW Pro 900 Series
boiling pan. Featuring motorised tilting, the 150-litre pan is made with a
large radius between side and bottom for easy cleaning and with a built-in
front pouring spout and removable stainless-steel strainer. Gas and electric
versions are available with water jacket, and a directly heated gas version
is also offered. The pan is controlled by a simmerstat and gas valve with
flame failure ionisation probe and sparking ignition. All boiling pans have
an AISI 316 L specification stainless steel base to the tank. Charvet has also
added 100L 18kW gas and 13.5kW electric boiling pan options for the heavy
duty but medium sized Pro 700 range. The manufacturer reports this
series is popular with distributors because, at 700mm deep (compared to
the traditional 900m depth), it saves 200mm for the kitchen designer but
still has Charvet’s cooking power. Both versions of these boiling pans can
feature a water jacket, and direct heating is also available for the gas heated model.

Universal food prep range available in three sizes
Wrexham-based
IMC has introduced
the MF multi-functional
range of universal
peelers, available in
three models and
designed to quickly peel
a full load of potatoes
or other vegetables.
The MF range allows
caterers to peel or
prepare a range of
items from a single
machine. Each unit is
fitted with door and lid
safety interlocks and a
Class A air brake and
WRAS approved as
standard. Other features
include a tough Perspex
inspection window,
built-in controls with an adjustable timer, and flexible waste and water
inlet arrangements. The smallest MF5 unit has a 5kg capacity and
handles 130kg an hour, the larger MF10 is capable of peeling 280kg
an hour, while the 15kg capacity MF15 can process up to 400kg per
hour. In addition to the standard peeling plate, options include: a knife
plate to give a smooth look to potatoes and carrots; a special plate for
peeling onions and shallots; a washing plate for summer vegetables;
as well as a plate for cleaning mussels; and a salad-spinning basket.
