PAPAYA & MINT
SMOOTHIE


  • 1 papaya peeled, seeded, and
    cut into chunks

  • 1/2 cup ice cubes (optional)

  • 1/2 cup non-fat Greek yogurt (regular
    yogurt could be used as well)

  • 1/2 tablespoon honey

  • The juice of 1/2 lemon

  • Water, to taste

  • 4 fresh mint leaves, plus 1 or
    2 sprigs for garnish

  • Refrigerate the papaya until very cold; at
    least one hour or overnight.

  • Blend the papaya, ice, yogurt, honey and
    lemon juice in a blender. Add water, one
    tablespoon at a time, until the mixture
    is smooth and thinned to the desired
    consistency. Blend in the mint leaves.

  • Garnish with mint sprigs and serve.
