GRAIN, BEANS,

SALAD


  • 500gms avocado

  • 160gms arugula

  • 200gms baby carrots

  • 210gms quinoa

  • 20gms  ax seeds

  • 20gms melon seeds

  • 20gms sun ower seeds

  • 40gms walnuts

  • 20gms pine nuts

  • 40gms Italian parsley


FOR DRESSING


  • 120mls lemon juice

  • 40mls olive oil

  • 12gms mustard

  • 4gms salt

  • 4gms black pepper

  • 20gms micro greens for garnish

  • Rinse quinoa, using a sieve,
    under the tap.

    • Bring two cups of water and the
      quinoa to a boil and simmer for
      10–15 minutes, until the water is
      fully absorbed. Turn o the heat
      and leave it cool.

    • Blanch the baby carrots.

    • Mash the avocado to make a
       ne purée. Add the salt, pepper
      and lemon juice.

    • Whisk the olive oil, lemon,
      mustard, salt and pepper
      together in a bowl until the oil
      emulsi es into the dressing.

    • Mix all the other ingredients
      in a large bowl and then toss
      in the mustard dressing and
      check the seasoning.

    • Garnish with the fresh micro
      greens and serve with the
      avocado purée.
