STRAWBERRY & KALE SHAKE

  • 200gms fresh kale leaves

  • 50gms fresh strawberries

  • 10gms mint leaves

  • 10gms basil leaves

  • 5gms rosemary

  • 10gms fennel leaves

  • 2gms salt

    • 2gms black pepper

    • 100mls water

    • Wash all the vegetables and
      strawberries well.

    • Blend them together.

    • Serve without straining.




JAPANESE CHEESECAKE WITH STRAWBERRIES

  • 300gms white chocolate

  • 200gms cream cheese

  • 3 eggs, seperated

  • 1tsp vanilla extract

  • 100gms chopped strawberries,
    lightly roasted to remove the water


TOPPING



  • Icing sugar

  • Chopped strawberries

  • Melt white chocolate over low
    heat in a double boiler.

  • Stir the cream cheese,
    vanilla extract and egg yolks
    into this mixture.

  • Beat the egg whites until
    you get sti peaks.

    • Fold into the chocolate cream
      cheese mixture along with the
      roasted strawberries.

    • Pour into six small moulds and
      bake at 160°C for 12 minutes or
      until the centre is jiggly.

    • Remove and cool for at least
      four hours.

    • Just before serving, dust
      with icing sugar and top
      with strawberries.
