FIVE TASTY MEALS ON THE TABLE

800g chat potatoes
8 x 100g lamb leg steaks
Salt and pepper, to taste
1 tblsp olive oil
60g bag baby rocket leaves
2 cups thinly shredded red cabbage (180g)
425g can baby beets, drained, halved
2 large oranges, peeled, thinly sliced
¾ cup walnuts, toasted
½ cup Greek salad dressing
75g soft feta, crumbled

1 Place potatoes in a shallow, microwave-
safe dish.Add 2 tblsps water. Cover with
absorbent kitchen paper. Microwave on
High for about 8 minutes, or until tender.
Drain potatoes.
2 Meanwhile, season lamb with salt
and pepper.

4 Heat half the oil in a large, non-stick,
frying pan over a medium to high heat.
Add lamb in two batches. Cook for about
3 minutes on each side, or until cooked
to your liking. Remove. Keep warm.
5 Meanwhile, heat remaining oil in same,
clean pan over a high heat.Add potatoes.
Cook, turning occasionally, for about
3 minutes, or until golden. Remove.
6 Toss rocket, cabbage,
beetroot, oranges,
walnuts and
dressing in
a large bowl.
7 Serve lamb
with potatoes
and salad.
Sprinkle salad
with feta.

8 00g Kent pumpkin, peeled, cut into
2cm wedges
750g diced chicken breast
¼ cup olive oil
2 leeks, trimmed, thinly sliced
2 cloves garlic, crushed
300ml tub light cooking cream
2 tblsps mango chutney
1 tblsp wholegrain mustard
150g green beans, trimmed, cut in half
Salt and pepper, to taste

1 Place pumpkin in a large, microwave-
safe dish. Add 2 tblsps water. Cover with
absorbent kitchen paper.
2 Microwave on High for about 6 minutes,
or until tender. Drain.
3 Meanwhile, toss chicken with half the oil.
5 Heat a large, non-stickfrying pan over
a medium to high heat. Add chicken in two
batches. Cook, stirring occasionally, for
about 3 minutes, or until browned. Remove.
6 Heat remaining oil in same pan over a
medium to low heat. Add leeks and garlic.
Cook, stirring occasionally, for about 5
minutes, or until soft.
7 Add cream, chutney and mustard. Stir
until combined.Bring to boil. Returnchicken
with beans. Cover with lid. Simmer for
about 5 minutes, or until chicken is cooked
through and beans are tender. Season with
salt and pepper.
8 Serve chicken with pumpkin.
