to be dark and spicy. I know it’s full of fat,
but it’s my comfort food. The hawker centre
at Adam Road has a good one!”

“Taking fried chicken to another level, the ayam
penyet (fried smashed chicken) from Trivex
Food Court in Macpherson is one of the best
I’ve ever had. The chicken, which is smashed
with a mortar, is served with rice accompanied
with tahu goreng (deep fried tofu), cucumber,
tomatoes, and chilli. This stall is generous with
servings, plus they make the best chilli, which
is essential in a good ayam penyet.”

“Next door to our local food centre in Joo
Chiat is a restaurant that serves Thunder
Tea Rice. The precursor to healthy rice
bowls, this dish has a green sauce of herbs
and tea, which you pour over brown rice,
Chinese greens, diced bean curd, green
beans, peanuts and ikan bilis. The thunder
is not related to any post effects of all that
fibre in a bowl, but the noise made when the
Hakka used to mash up all the ingredients in
a mortar and pestle. Yummy and healthy!”

“No. 18 Fried Kway Teow at Zion Riverside
Food Centre is a must-visit. Waiting in the
ever-present line is worth it; your little packet
of black noodles wrapped in paper is a true
gift of yummy delight. I’ve even seen a smartly
dressed couple hop out of a very fancy car and
queue up for their late-night snack while their
driver waited. They aren’t the only uptown
folks visiting either; Prime Minister Lee also
patronises the spot!”

is really tender, served with a side salad and
piping hot rice!
