NASI GORENG


SERVES 4
PREP + COOK 40 MINS


✦ 2 tbsp peanut oil
✦ 250g pork fillet, sliced thinly
✦ 1 medium onion, sliced thinly
✦ 1 medium red capsicum,
sliced thinly
✦ 3 long red chillies,
sliced thinly


TIP
To save time, use
sliced barbecued
pork (from Asian
food stores) instead

✦ 2 garlic cloves, crushed
✦ 2.5cm piece fresh
ginger, grated
✦ 1 tsp shrimp paste
✦ 450g packet microwave
white long-grain rice
✦ 250g cooked shelled small
king prawns
✦ 1 tbsp kecap manis
✦ 6 green onions, sliced
thinly
✦ 4 eggs

✦ ¼ cup roasted unsalted
peanuts, chopped coarsely
✦ lime wedges, to serve

1 Heat half the oil in a wok.
Stir-fry pork in batches until
browned. Remove from wok.
2 Heat remaining oil in wok.
Stir-fry onion, capsicum, chilli,
garlic, ginger and shrimp paste
until vegetables soften. Add rice,
stir-fry until combined.

3 Return pork to wok with
prawns, kecap manis and half
the green onion. Stir-fry until hot.
Divide evenly among serving
bowls. Cover to keep warm.
4 Meanwhile, fry eggs in wok
until whites are firm, edges crisp
and yolks cooked to your liking.
Sprinkle bowls of rice mixture
with peanuts and remaining
onion, top with a fried egg. Serve
nasi goreng with lime wedges.
