BEEF & BLACK BEAN


SERVES 2 PREP + COOK 20 MINS


✦ 1 tbsp peanut oil
✦ 250g beef rump steak,
sliced thinly
✦ 1 small onion, cut into wedges
✦ 1 small yellow capsicum,
chopped coarsely
✦ 400g choy sum, stalks
and leaves separated,
chopped coarsely
✦ 1 ½ tbsp spicy black
bean sauce
✦ 2 tsp soy sauce
✦ 227g can whole water chestnuts,
drained, rinsed, quartered
✦ 1 tbsp water
✦ 2 tbsp coarsely chopped
roasted macadamias


1 Heat half the oil in a wok. Stir-fry
beef, in batches, until browned.
Remove from wok.
2 Heat remaining oil in wok. Stir-fry
onion, capsicum and choy sum stalks
until stalks are tender. Add choy sum
leaves. Stir-fry until wilted.
3 Return beef to wok with sauces,
chestnuts and water. Stir-fry until hot.
Serve sprinkled with macadamias.

1 Placenoodlesina medium
heatproofbowl.Coverwith

boilingwater.Separatewith
fork,drain.
2 Heathalftheoilina wok.
Stir-fryshallot,garlicandginger
untilshallotsoftens.Addmussels
andcookingwine.Cook,
covered,5 minsoruntilmussels
open.Removemusselsfrom
wok,reserve¼cupcooking
liquid.Removehalfofthe
musselsfromtheirshells.
3 Heatremainingoilinwok.
Stir-frygreenonionandchilli
untilonionsoftens.Return
musselstowokwithnoodles,
sauceandreservedcooking
liquid.Stir-fryuntilhot.Season.
Servesprinkledwithcoriander.
