✦1 carrot,halved lengthways,
slicedthinly
✦2 potatoes,peeled,1cm cubes
✦1 tspmustardseeds
✦½tspfennelseeds
✦1 tspgroundcumin
✦½greencabbage,shredded
✦425gcantuna, drained,
flaked
✦1 longgreenchilli, seeded,
finelysliced
✦corianderleaves, brown
rice, to serve


1 Ina smallbowl, combine
coconutmilkandcoconut.
Soak 10 mins.
2 Ina largeheavy-based
saucepan, heatoilonhigh.Cook
carrotandpotato4-5mins until
lightlybrowned.Addseedsand
cuminandcook,stirring, 1 min.
3 Mixin coconutmixtureand
cabbage.Cookonlowheat,
covered,6-8mins untilpotato
is tenderandcabbagewilts.
4 Gentlystirtunathrough.
Sprinklewithgreenchilliand
coriander.Accompany with
brown rice.

✦microherbs,pappadums,
mango chutney, to serve


1 Preheatovento 180 °C.
2 Ina largeflameproofcasserole
dish, heathalfoilonhigh.Brown
beef, in 2 batches,3-4mins each.
Transfertoa plate.
3 Heatremainingoilin samepan.
Sauteonion3-4mins. Stirin paste,
garlic,ginger,garammasala,curry,
mustardandseeds. Cook1-2mins.
4 Returnbeeftopanwith
tomato,capsicumandwater.
Bringtosimmer.
5 Bake,covered, 1 ¾hours.
Season.Sprinklewithherbs.Serve
with pappadums and chutney.

3 Addvegetablesandeggs. Cook
2-3mins untilvegetablesarejust
tenderandeggsareheatedthrough.
4 Scatterwithmintandfriedonion
(seetip)toserve.Accompany with
cucumber spears.

TIPForthefriedonion,heat1 tbsp
oilonhigh, shallow-fry5 thinly
slicedeschalots1 minuntilgolden
brown. Drainonwire rack lined
with paper towel.
