1 Ina bowl,whisk1 cup
pumpkinpuree,2 eggs,
3 eggyolks,¼cupcream,
1 cupgratedparmesan,
saltandpepper.
2 Cook500gspaghetti
accordingtopacket
instructions.Reserve
½cupofthepastawater
beforedraining.
3 Fry½cupsageleavesin
oliveoilovermediumheat
for 10 secsoruntilcrispy.
Removefrompan.Fry
100gdicedpancettafor
4-5minsoverlow-medium
heat. Add 1 garlic clove,
cook for another min, then
discard it. Add spaghetti
to pancetta oil and mix.
4 Pour spaghetti mix into
pumpkin sauce, toss to
combine. Add pasta water
as required to create a
creamy sauce. Top with
sage leaves, parmesan
and pepper.

carrot cordial in a tumbler of
ice. Top with soda water and
garnish with a sage leaf.
CARROT CORDIAL Add 500ml
water, 500g caster sugar and
2 cups carrot peelings to a
saucepan over medium heat.
Bring to boil. Reduce heat,
cover, simmer for 30 mins.
Remove from heat. Cool, strain
into a bottle. Store in fridge.
