500gsnapperfillets
1 small(60g)romatomato,
choppedfinely
½ (65g)lebanesecucumber,
choppedfinely
¼ small(200g)pineapple,
choppedfinely
500gjicamaor daikon,peeled,chopped
finely(seenotes,previouspage)
2 tablespoonsfinelychopped
bottledjalapeños
cornchips,to serve


DRESSING
⅓ cup(80ml)freshlysqueezed
limejuice
¼ cup(60ml)tomatojuice
2 tablespoonsorangejuice
2 tablespoonshabanerohotsauce
1½tablespoonsextravirgin olive oil


1 Makedressing.
2 Slicethefishfinelyandarrange
overa servingplate.Seasonwith
a littleseasaltflakes;spoonover
halfthedressing.Cover; refrigerate
for 30 minutes.
3 Topfishwithtomato,cucumber,
pineapple,jicamaandjalapeñothen
spoonovertheremaining dressing.
Serve with corn chips.

Combineallingredientsina screw-top
jar; shake well. Season with salt.


PUMPKIN& CORIANDER
QUESADILLAS
PREP+ COOK TIME 40 MINUTES
MAKES 24

¼ cup(40g)choppedkalamataolives
¼ teaspoonchillipowder
½ cup(125ml)extravirginoliveoil
500gpumpkin, cutinto1cmcubes
1 teaspoonsmokedpaprika
2 cups(200g)gratedmozzarella
150gfetta,crumbled
12 whitecorntortillas
½ cuplooselypackedfresh
corianderleaves

1 Preheatovento180°C/160°Cfan.
2 Blendtheolives,chillipowder and
oiluntilwellcombined.
3 Placepumpkinonanoventray
linedwithbakingpaper.Tosswith
1 tablespoonoftheflavouredoiland
sprinklewithpaprika.Roastfor
about 20 minutesor until golden
brownandsoft.
4 Combinethecheesesina bowl.
5 Place6 tortillasona cleanbench.
Sprinklewithcheeses,pumpkin
andcoriander;topwithremaining
tortillas.Brushwell with the
flavouredoil.
6 Placethequesadillasonlightly
oiledoventrays.Bakefor7 minutes.
Turnthequesadillasover;cookfor
a further7-8minutesoruntil
browned.Cutinto quarters.
Serve warm.
