RICE& BLACKBEANS

400gcancrushedtomatoes
1½cups(375ml)chickenstock
1½cups(300g)longgrainwhite rice
20gbutter
2 teaspoonschillipowder
½ teaspoondriedoreganoleaves
½ teaspoongarlicsalt
1 teaspoongroundcumin
400gcanblackbeans,rinsed,drained
fresh oregano leaves, to serve


1 Combinetomatoeswithallthe
remainingingredients,exceptthe
beansandthefreshoregano,in
a mediumheavy-basedsaucepan.
Bringto theboil,thenreducethe
heatto low.Coverthepan;simmer
forabout 25 minutes or until the
riceis tender.
2 Removefromtheheat.Foldin the
beansandseasonto taste.Serverice
witha sprinkleof fresh oregano
leaves, if desired.
