PUMPKINBREADSTICKS

MAKES 6

900gbutternutpumpkin,halved
lengthways,seedsremoved
2 teaspoons(7g)driedyeast
1 tablespoonhoney
½cup(125ml)lukewarmwater
2 tablespoonsvegetableoil
11/3cups(200g)wholemeal
plainflour
2 cups(300g)‘00’flour,breadflour
orplainflour
½cup(75g)sunflowerseeds
2 tablespoonssesameseeds
1 tablespoonlinseeds
1 tablespoonseasaltflakes
1 egg,beatenlightly
¼cuppepitas(pumpkinseedkernels)
1 tablespoonpoppyseeds
2 tablespoonssunflower seed
kernels,extra

1 Preheatovento180°C/160°Cfan.
2 Placepumpkinonanoventray,
coverwithfoil;bakefor1¼hoursor
untilverytender.Whencoolenough
tohandle,scoopfleshintoa medium
bowl;mashwitha fork.Youneed
1½cupsmashedpumpkin.
3 Combineyeast,honeyandthe
waterina smallbowl;coverwith
plasticwrap.Standina warmplace
for 10 minutes or until frothy.
Stirinoil.
4 Combinesiftedflours,sunflower,
sesameandlinseedseeds,andsaltin
a largebowl.Addyeastmixtureand
mashedpumpkin;mixtoa soft
dough.Kneaddoughona floured
surfacefor 10 minutesoruntil
smoothandelastic.(Ifyouhavean
electricmixerwitha doughhook,
mixonmediumspeedfor6 minutes
or until smooth and elastic.)

5 Placedoughina largeoiledbowl;
coverwithplasticwrap.Standin
a warmplacefor1 hour or until
doubledinsize.
6 Increaseovento200°C/180°C
fan.Punchdowndoughwithyour
fist.Kneadona flouredsurfacefor
1 minuteoruntilsmooth.Rolldough
intosix4cmx 30cmlengths;place
ona largeoiledoventray.(Ordivide
doughinto 12 even-sized balls, roll
inseeds;seenotes.)
7 Coverdoughlooselywithoiled
plasticwrap.Standina warmplace
for 40 minutesoruntildough is
almostdoubledinsize.
8 Brushdoughwithegg,sprinkle
withpepitas,poppyseedsandextra
sunflowerseeds.Bakefor 25 minutes
oruntilgoldenandbreadsounds
hollowwhentapped. Cool on
a wire rack.

PICKLEDPUMPKIN
PREP+ COOKTIME 30 MINUTES
MAKES5 CUPS


1½cups(375ml)applecider vinegar
1 cup(250ml)water
1 cup(220g)whitesugar
¼teaspoonblack peppercorns
2 staranise
1 bayleaf
1 teaspoonbrownmustardseeds
1kgbutternutpumpkin, peeled,
slicedthinly


1 Placevinegar,thewater,sugar
andspicesina largesaucepan
overmediumheat.Cook,stirring
occasionally,for5 minutes or until
sugardissolves.
2 Addpumpkin,increaseheatto
highandbringjustbelowboiling
point.Reduceheattolow-medium;
simmerfor 15 minutesoruntil
pumpkinisjusttender.
3 Ladlemixtureintohotsterilised
jars(seetips, page 124); seal
while hot.
