½ teaspoonground nutmeg

3 eggyolks
1 teaspoonfinelygratedlemonrind
1 1/4cups(100g)finelygrated
parmesan
1 cup(250ml)pouringcream
1/4cupfinelychoppedfresh
sageleaves
1½tablespoonsfinelychopped
freshchives
6½freshlasagnesheets
150gsoftgoat’scheese,crumbled
ROCKET& PEPITASALAD
2 teaspoonslemonjuice
1 teaspoonwholegrainmustard
1½tablespoonsextravirginolive oil
100gbabyrocketleaves
1/4cuppepitas(pumpkin seed
kernels),toasted
1 Preheatovento200°C/180°Cfan.
2 Dividepumpkinhalves,skin-side
up,betweentwolargeoventrays;
drizzleeachpumpkinhalfwiththe
oil.Season.Coverwithfoil;bakefor
2 hoursoruntilverytender.Cool.
Removeseeds,thenpeelawayskin.
Workinginbatches,placepumpkin
ina largesieveovera bowl;leaveto
drainexcessliquid,reserve.Transfer
pumpkintoa bowl; mash with a
potatomasher.
3 Heatremainingoilina large
saucepanovermediumheat;cook
leekandgarlic,stirringoccasionally,
for 10 minutesoruntilsoft.Combine
leekmixture,mashedpumpkin,
nutmegandreserved pumpkin liquid.
Season to taste.
4 Processricotta,eggyolksand
rind,inbatchesuntilsmooth.Add
1 cup(80g)ofparmesanandthe
cream,pulseuntiljustcombined.
Stirinherbs.Season.
5 Oila 3.5-litre(14-cup)ovenproof
dish,around24cmx 30cmx 6cm.
Place2 lasagnesheetsinbaseof
dish.Spoonovera thirdofthericotta
mixture;smooththesurface.Top
withhalfpumpkinmixture.Repeat
layers,thentopwith2½lasagne
sheetsandanotherthirdofricotta
mixture.Sprinklewithgoat’scheese
andremainingparmesan.Coverwith
a layerofbakingpaper,thenfoil.
(Thelasagnewillhavethreelayers
ofpasta,twolayersofpumpkinand
threelayersofricottamixture.)
6 Bakelasagnefor 50 minutes.
Removefoilandpaper;bakefor
a further 15 minutesoruntilgolden
andhot.Stand 10 minutes.
7 Meanwhile,make rocket and
pepitasalad.
8 Serve lasagne with salad.

Addrocketand pepitas; toss gently
to combine.
