2 cups(400g)uncracked greenwheat
freekeh
1 litre(4cups)water
1 mediumheadbroccoli(350g),
cutintosmallflorets
1 bunchbroccolini(175g),trimmed,
cutinto4cmlengths
600gbeefrumpsteaks
¼cup(20g)flakedalmonds,toasted
1 freshlongredchilli, sliced thinly


HERBDRESSING
2 cups(120g)freshflat-leaf
parsleyleaves
1 freshlongredchilli, seeded,
choppedfinely
5 anchovyfillets
1 tablespoondijonmustard
1 teaspoonfinelygratedlemonrind
1/3cup(80ml)lemonjuice
3 gherkins(45g),choppedcoarsely
1 tablespoonredwinevinegar
½ cup (125ml) extra virgin olive oil


1 Placefreekehandthewaterina
mediumsaucepanovermediumheat;
bringtotheboil.Reduceheattolow;
cook,covered, for 20 minutes or until
justtender.
2 Meanwhile,makeherbdressing.
3 Preheata largegrillplate(orpan
orbarbecue)overmediumheatuntil
smoking.Addbroccoliandbroccolini;
grillfor3 minuteseachsideoruntil
lightlycharred.Transfertolargebowl.
4 Grillsteaksfor4 minutes;turnand
cooka further3 minutesformedium-
rareoruntilcookedasdesired.
Transfertoshallowbowlwith1 cup
ofherbdressing;standfor5 minutes.
5 Slicesteaksthinlyacrossthe
grain;returntothedressinginbowl,
tosstocoat.Addsteakandfreekeh
tovegetables;tosstomixwell.
6 Transferfreekehmixtureto
a platter;topwithalmondsand
chilli; season. Serve with dressing.

HERBYYOGHURTPOTATOSALAD
16 babypotatoes(640g)
1/3cupfreshflat-leafparsleyleaves,
choppedcoarsely
1/3cupfreshmintleaves,chopped
1 clovegarlic,crushed
½teaspoongroundallspice
2 tablespoonslimejuice
¼cup(60ml)extravirginoliveoil
½cup(140g)Greek-styleyoghurt
100gwatercresssprigs

1 Cutporkinto1cm-thickslices.
Combinegarlic,honey,paprika,
parsleyandoilina largebowl;add
pork,tosstocoatinmixture.Cover;
refrigeratefor3 hoursorovernight.
2 Makeherbyyoghurtpotatosalad.
3 Threadporkontoskewers;cook
skewers,inbatchesif necessary,on
a heatedoiledgrillplate(orgrillor
barbecue),turning,for2 minutes
eachsideoruntilporkis browned
andcookedthrough.
4 Serveporkskewerswithsaladand
remaining herby yoghurt mixture.

HERBYYOGHURTPOTATOSALAD
Boil,steamormicrowavepotatoes
untiltender;drain,covertokeep
warm.Processherbs,garlic,allspice,
juiceandoiluntilwellcombined.Stir
herbmixturethroughyoghurt;season.
Halvepotatoes,placeona platter;
drizzleoverhalftheyoghurtmixture,
reservingremainingto serve. Top with
watercress; season.
