1kgcauliflower
22/3cups(660ml)buttermilk
2 tablespoonsTabasco,plusextra to serve
4 eggs
2 cups(300g)plainflouror
gluten-freeflour
2 teaspoonsmixeddriedherbs
1 teaspoonfine salt
1 teaspooncayennepepper
1 teaspoongarlicsalt
1 teaspoonsweetpaprika
1 teaspooncelerysalt
1 teaspoononionpowder
vegetableoil,fordeep-frying


1 Cutcauliflowerinto8cmlargeflorets.
2 Combine2 cupsbuttermilkandthe
Tabascoina largezip-topbag.Add
cauliflower;sealbag,shakeuntilwell
coated.Refrigerateinbag for at least
2 hoursorovernight.
3 Preheatovento220°C/200°Cfan.
Linea largeoventraywithbakingpaper.
4 Draincauliflower;reservemarinade
ina mediumbowl.Placecauliflowerina
singlelayerontray.Bakefor 15 minutes.
Reduceovento160°C/140°Cfan.
5 Meanwhile,addtheremaining
buttermilkandeggstoreserved
marinade;whisktocombine.Combine
flour,herbs,salt,cayenne,garlicsalt,
paprika,celerysaltandonion powder
ina separatelargebowl.
6 Filla largesaucepanordeepfryer
one-thirdfullwithoil;heatto180°C
(oruntila cubeofbreadturnsgoldenin
10 seconds).Workinginbatches,dust
cauliflowerpiecesinflourmixture;shake
toremoveexcess.Dipintobuttermilk
mixture,thendustinflourmixture
again;shaketoremoveanyexcess.
Deep-frycauliflower,inbatches,for 6
minutesoruntilgoldenandcrisp.Drain
onpapertowel.Keepwarminovenwhile
youcooktheremainingcauliflower.
7 Servecauliflowerwithpickles,if you
like, drizzled with extra Tabasco.

1½mediumredonions(255g),sliced
400gflatmushrooms,sliced
2 clovesgarlic,crushed
1 teaspooncayennepepper
1 cup(250ml)Mexican-stylebeer
½cup(125ml)smokybarbecue sauce
8 smallbreadrolls(240g),
warmed,split
2 tablespoonsdijonmustard

BRUSSELSSPROUTSLAW
160gbrusselssprouts,slicedthinly
½mediumredonion(85g),
slicedthinly
1/3cup(100g)mayonnaise
1 tablespoon lemon juice

1 Heatoilina largesaucepanover
highheat.Addonionandmushroom;
cookfor8 minutes.Addgarlicand
cayennepepper;cookfor1 minute.
Addbeer;cook,scrapingthebottom
ofthepanwitha woodenspoon,for
1 minute.Addbarbecuesauce;cook
for6 minutesoruntil thickened.
Seasontotaste.
2 Makebrusselssproutslaw.
3 Spreadrollswiththemustard.Fill
withmushroommixtureandslaw.
Serve with french fries, if you like.
