PULLED“PORK” SLIDERS

2 x 565gcannedyoungjack fruit
inbrine
¾cup(180ml)water
½cup(125ml)soysauce
1/3cup(75g)firmlypacked
brownsugar
¼cup(70g)tomatopaste
2 tablespoonsricewinevinegar
2 tablespoonssriracha(seenotes)
1 teaspoonsesameoil
2 teaspoonsgratedfreshginger
1 tablespoonvegetableoil
1 smallonion(80g),halved,
slicedthinly
2 clovesgarlic,crushed
12 frozenlotusleafbuns(660g)
(seenotes)
¼cupfreshcorianderleaves
japanesemayonnaise, to serve


SLAW
1½tablespoonsricewinevinegar
1 tablespoonsoysauce
1 tablespoonhoney
3 cups(240g)finelyshredded
greencabbage
1 smallredcapsicum(150g),seeded,
slicedthinly
2 greenonions,slicedthinly


1 Drainjackfruit;patdrywithpaper
toweltoremovebrine.Combinethe
water,soy,sugar,tomatopaste,
vinegar,sriracha,sesameoil and
gingerina smallbowl.
2 Heatvegetableoilina medium
fryingpanovermediumheat.Add
onionandgarlic;cook,stirring,for
3 minutesoruntilonionissoft.Add
jackfruit;cook,stirringoccasionally,
for3 minutesoruntilstartingto
caramelise.Addsoymixture;bring
toa simmer.Reduceheattolow;
simmergentlyfor 25 minutes,gently
breakingupjackfruitwithtwoforks,
removingcore(thisresemblesthe
core on a pineapple) and seeds, until


sauceisthickandjackfruitistender.
Addmorewaterif the mixture
becomestoothick.
3 Meanwhile,cutsquaresofbaking
paperlargeenoughforbunstosit
on.Placebunsonpaperina bamboo
steamerovera saucepanofgently
simmeringwater;cover,steamfor
15 minutesuntilrisenandheated
through.Coolfor5 minutes
before splitting.

4 Makeslaw.
5 Dividethejackfruitmixture
andslawamongwarmbuns;top
withcoriander and mayonnaise
to serve.

Stirvinegar,soyandhoneyina large
bowluntilsmooth.Addcabbage,
capsicumandgreenonion; toss
gently to combine.
