DEEP-DISHPIZZAPIE

3 cups(450g)plainflour
½ cup(85g)finepolenta
1 tablespooncastersugar
2 teaspoons(7g)driedyeast
1 teaspoonfineseasalt
1¼cups(310ml)lukewarmwater
50gbutter,melted
2 largeredcapsicums(700g)
2 tablespoonsoliveoil
1 teaspoonsmokedpaprika
1 teaspoondriedchilliflakes
50gbutter,softened
200gvegetarianmozzarella,grated
1 cup(120g)gratedvegetarian
cheddar
½ teaspoon dried oregano


oliveoil,extra,to brush
smallbasilleaves,to serve

VEGIEPIZZASAUCE
1 smallonion(80g)
1 mediumzucchini(120g)
1 mediumcarrot(120g)
1 stickcelery(150g)
1 tablespoonoliveoil
2 clovesgarlic,slicedthinly
1 tablespoontomatopaste
400gcannedchoppedtomatoes
½ cup(125ml)water
1 teaspoondriedoregano
1 teaspoonbrownsugar

1 Mixflour,polenta,sugar,yeast
andsaltinthebowlofanelectric
mixerfittedwitha doughhookuntil
combined. Add the water and melted

butter;kneadfor5 minutesoruntil
smoothandelastic.Placedoughin
a largeoiledbowl.Cover;stand
ina warmplacefor 45 minutes or
untildoubledinsize.
2 Preheatovento200°C/180°Cfan.
Lineanoventraywithbakingpaper.
3 Quartercapsicum;removeseeds.
Cut3cmroundsfromcapsicumusing
a cutter.Finelychopoffcuts;reserve
forpizzasauce.Placetherounds,
skin-sideup,ontray.Drizzlewith
oil;sprinklewithpaprika and chilli;
roastfor 10 minutes.
4 Meanwhile,make the vegie
pizzasauce.
5 Dividedoughinto2 pieces.Roll
outeachpieceona flouredsurface
to12cmx 15cmrectangles.Spread
evenlywithsoftenedbutter.Roll
uplengthways;tuckendsunder
andshapeinto2 balls.Placeballs,
side-by-side,inoiledbowl.Cover;
refrigeratefor 15 minutes.
6 Greasetwo22cmround,4cmdeep
cakepans(orovenprooffryingpans).
Rollouteachdoughpiecetoa 25cm
round.Linepanbaseswithdough,
pushingdoughslightlyuptheside;
spreadwith1/3cupofpizzasauce.
Scatterwithcheese;topwiththe
capsicumpepperoniandoregano.
Brushcrustwithextraoil.
7 Bakepizzasfor 25 minutesoruntil
crustisdarkgolden.Coolinpanson
wireracksfor 10 minutes.Serve hot
topped with basil leaves.

VEGIEPIZZASAUCE
Coarselygratevegetables.Heatoil
inlargesaucepanovermediumheat;
cookgarlicfor1 minuteuntilsoft.
Addvegetablesandreserved
capsicum.Reduceheattolow;
cook,covered,stirringoften,for
10 minutesoruntilsoft.Addpaste;
cookfor1 minute.Addtomatoes
andremainingingredients;simmer
for 15 minutesoruntil thick. Season.
Puree until smooth.
