375gbroccolini,trimmed,halved
300gfreshthineggnoodles
2 tablespoonscoconutoil
16 uncookedlargeprawns(1.2kg),
shelled,deveined,tailsintact
¼ teaspoondriedchilliflakes
2 teaspoonsfinelygratedfreshginger
1½cups(375ml)chickenstock
¼ cup(60ml)chineseblackvinegar
¼ cup(60ml)darksoysauce
¼ cup (70g) tahini paste


1 teaspoonsichuanpeppercorns,
crushedcoarsely
1 tablespoonbrownsugar
⅓ cup(50g)roastedunsaltedcashews
2 greenonions,slicedthinlyon
thediagonal
1 cuplightlypackedfresh
corianderleaves

1 Cookbroccoliniina largesaucepan
ofboilingwaterfor3 minutes;remove
frompanwitha slottedspoon.Return
watertotheboil.Cooknoodlesin
samewaterfor1 minute;drain.Divide
noodles and broccolini among bowls.

2 Heatcoconutoilina non-stick
fryingpanovermediumheat.Add
prawns;cook,turningfor3 minutes
oruntiljustcooked through. Remove
frompan.
3 Addchilliflakesandgingertothe
samepan;cook,stirring,for1 minute.
Addstock,vinegar,sauce,tahini,
peppercornsandsugar;simmerfor
5 minutesoruntilthesaucethickens.
Returnprawnstopan;cookfor
1 minuteoruntilheatedthrough.
4 Spoonprawnmixtureoverthe
noodlesandbroccolini;topwith nuts,
green onion and coriander.
