2 tablespoonspeanutoil
3 clovesgarlic,choppedfinely
1 tablespoonfinelygrated
freshginger
¼ cup(75g)thairedcurrypaste
500gorangesweetpotato,peeled,
choppedcoarsely
1 litre(4cups)vegetablestock
2 tablespoonsfishsauce
270mlcannedcoconutmilk
175gbroccolini,trimmed,
halvedcrossways
100gsnakebeans,cutinto
7cmlengths
2 tablespoonslimejuice
asianfriedshallots,freshcoriander
leaves and lime wedges, to serve
1 Soaknoodlesina largebowlof
coldwaterfor 20 minutes or until
softened;drain.
2 Meanwhile,heatoilina large
saucepanovermediumheat,add
garlic,gingerandcurrypaste;
cook,stirring,for 2 minutes or
untilfragrant.
3 Addsweetpotato,stock,fishsauce
andcoconutmilk;bringtotheboil.
Reduceheattolow;simmer,covered,
for 10 minutesor until sweet potato
isjusttender.
4 Addbroccoliniandbeanstopan;
cook,fora further2 minutesor
untiltender.Stirin lime juice;
seasontotaste.
5 Dividethenoodlesbetweenbowls
andpouroverthehotsoup.Topwith
friedshallotsandcoriander leaves;
serve with lime wedges.
