500gfreshflatricenoodles
350gcleanedsquidhoods
2 tablespoonspeanutoil
3 clovesgarlic,crushed
2 tablespoonslightsoysauce
2 tablespoonskecapmanis
¼ cup(60ml)water
2 eggs,beatenlightly
200gbroccolini,cutinto4cmlengths
2 tablespoonslemonjuice
¼ teaspoongroundwhitepepper
1 freshlongredchilli,slicedthinly
freshthaibasilsprigs,to serve


1 Placenoodlesina colanderandrinseunder
hotwater;shake to drain and help separate
strands.
2 Cutsquidhoodsinhalflengthways.Usinga
sharpknife,scoreinsidesurfaceina finecriss-
crosspattern.Cutinto3cmx 5cmpieces.
3 Heatoilina wokora largeheavy-based
fryingpanovermedium-highheat.Addgarlic;
stir-fryfor1 minuteoruntilfragrant.Add
squid;stir-fryfor1 minuteoruntilcurlingand
lightlybrowning.Addnoodles,saucesandthe
water;stir-frygentlyfor2 minutestocombine.
4 Movenoodlemixturetoonesideofwok.
Addeggtoothersideofwok;stirwell,then
foldthenoodlesontopofegg.Whentheegg
iscooked,addthebroccolini,juiceandpepper;
stir-fryfor1 minute.Serve stir-fry topped
with chilli and basil.
