FIVEINGREDIENTS
1 smokedtrout(350g)
1 freshbunchcoriander(100g)
1 tablespooncurrypowder
1½cups(295g)whitebasmatirice
4 eggs,at room temperature


STAPLES
1 teaspoonseasaltflakes
½ teaspoonfreshlyground
blackpepper
60gbutter
1 tablespoonoliveoil


1 Removeskinfromtrout;reserve.
Removefleshfromtroutinlarge
pieces;reservefishheadand
skeleton.Flakefleshintoa small
bowl,checkingforanyfinebones.
Refrigerateuntilneeded.
2 Washthecorianderwell,paying
particularattentiontotheroots.
Removetheroots;chopfinely.
Picktheleavesfromstems.Chop
three-quartersoftheleaveswith
thestems;reserve.Placereserved
fish head and skeleton and chopped


corianderrootsina medium
saucepanwith1.25litres(5cups)
water,saltflakesandpepper;
bringtotheboilovermediumheat.
Reduceheattoa simmer;cookfor
5 minutes.Removepanfromheat;
standstockfor 30 minutesfor
flavourstodevelop. Strain stock;
discardsolids.
3 Heatbutterandoilina 24cm
(topmeasurement)shallowsaucepan
overhighheat.Addcurrypowder;
cook,stirring,for1 minuteoruntil
fragrant.Addrice;cook,stirring,
for2 minutesoruntilglossyand
wellcoated.Add2½cupsstrained
stock(ifyouhaveless,topit upwith
water;seenotes).Bringtotheboil.
Cover;reduceheattolow.Cookfor
15 minutesoruntilriceistenderand
liquidisabsorbed.Removefrom
heat;stand,covered,for5 minutes.
Stirtoremoveanybitsofricestuck
tothebottomof the pan. Cover to
keepwarm.
4 Preheatovento180°C/160°Cfan.
5 Placereservedtroutskinonan
oventraylinedwithbakingpaper.
Roastfor 15 minutesoruntilgolden.
Coolontray;it willbecomecrispon
cooling. Break into small pieces.

6 Meanwhile,bringa smallsaucepan
ofwatertotheboil;carefullyadd
eggs,cookfor5 minutes.Place
immediatelyundercoldrunning
water.Peelandhalveeggs.
7 Stirflakedtroutandchopped
corianderintotherice;topwitheggs,
reservedcoriander leaves and crisp
trout skin.
