TOP TIPS
To cook using indirect
heat on a gas barbecue,
first place the food in
a pre−heated, covered
barbecue; turn the
burners directly under
the food off, while
keeping the side
burners on. With
a charcoal barbecue,
place coals against
the sides, leaving the
centre rack of the
barbecue empty.
A disposable
aluminium baking
dish can be placed
to catch fat drips.
