The word salmon comes from Latin “salire”, meaning “to jump”, a reference to
the fact wild salmon leap upstream to spawn. The genussalmoincludes the
highly popular Atlantic salmon, introduced to Australia and widely farmed in
Tasmania, as well as a number of species of trout. Wild salmon derives its pink
colour from the crustaceans it eats, but farmed salmon often has pigment
added to its feed to achieve that highly desirable hue.
