Egg & bacon bap
A breakfast fit for kings – and slimmers! Roll on the weekend...
SUPER SIMPLE
Serves
Ready in about minutes
rashers back bacon,
visible fat removed
Low-calorie cooking spray
large egg
tbsp fat-free natural fromage frais
¼ tsp mustard powder
g wholemeal roll, halved
baby gem lettuce leaves, roughly torn
For the ketchup:
g passata
Few drops of Tabasco
¼ tsp Worcestershire sauce
Put all the ketchup ingredients
in a small saucepan and bring to
the boil. Season to taste, then set
aside to cool.
Preheat a non-stick frying pan (or
griddle pan) over a medium-high
heat. Cook the bacon for - minutes
on each side, or until cooked through.
Remove from the pan and set aside.
Reduce the heat to medium
and spray the pan with low-calorie
cooking spray. Fry the egg for
- minutes, or until cooked to
your liking. Meanwhile, mix together
the fromage frais and mustard
powder, and lightly toast the roll.
Spread the mustard mixture over
the roll base. Top with the lettuce,
bacon, egg and a dollop of the
ketchup. Season and top with the
roll lid. Serve with the rest of the
ketchup on the side.
