Radish kachumba
SUPER SIMPLE V
Serves  Ready in about  minutes
Roughly dice g radishes, ½ cucumber,  spring onions
and  g tomatoes. Mix with the juice of  limes,
 tbsp red wine vinegar and  heaped tsp black onion
(nigella) seeds. Just before serving, stir through  tbsp
chopped fresh mint leaves.
Syns per serving: FREE n

Bombay potatoes
SUPER SIMPLE V 
Serves  Ready in about  minutes
Preheat your oven to °Cfan °Cgas . Halve
 g Charlotte potatoes and spread on a large, non-stick
baking tray. Mix  tbsp medium curry powder with ½ tsp
salt, ½ tsp freshly ground black pepper,  tsp turmeric,
½- tsp dried red chilli flakes and  tbsp lemon juice.
Dot this mixture over the potatoes, then toss to coat. Spray
with low-calorie cooking spray and roast for „… minutes,
stirring halfway, until crisp and golden.

Vegetable pilau rice
SUPER SIMPLE V
Serves  Ready in about  minutes
Dice  onion,  celery stick and  peeled carrots. Spray
a large, non-stick, lidded saucepan with low-calorie cooking
spray and place over a medium heat. Add the veg and a splash
of water and cook until softened. Add  tbsp Bart Blends
Pilau or Schwartz Pilau Rice seasoning and g dried
basmati rice, and stir well. Pour in ml vegetable stock
and bring to the boil. Reduce the heat, cover and cook for
… minutes, or until the rice is tender. Remove from the heat, stir
in g frozen peas, cover and leave to stand for … minutes.
