Dark and shady rum
- 4 limes, halved
- 1½ cups cold lager
- 3 cups ginger beer, chilled
- ½ cup dark rum
- crushed ice
- 2 tablespoons crème de cassis
- 12 dashes Angostura bitters

Preheat a barbecue grill or
char-grill pan on medium. Grill
4 lime halves, cut-side down, for
4-6 minutes, until lightly caramelised.

Gently pour lager into a 2-3L
jug, followed by ginger beer
and rum. Squeeze fresh limes
into jug.

Place grilled limes in jug and
top up with ice. Stir gently.

Add crème de cassis and
bitters. Serve straightaway.
Keep glasses
chilled for best
results on
a hot day.
