Makes 60 pieces
INGREDIENTS
165 gm egg whites
150 cocoa powder
750 gm almond powder
750 gm icing sugar
10 gm cinnamon powder
25 ml vanilla essence
METHOD
- Add almond powder in a bowl.
Sieve in the icing sugar, cocoa
powder, cinnamon powder and
vanilla essense. - In a separate bowl, beat egg whites
until stiff. - Fold the egg whites into the almond
mixture and mix well. - Bind the mixture together, till it
forms a stiff dough.
- Wrap the dough in a plastic bag
and keep it in the chiller for an hour.
Remove. - Roll the dough into 7 mm
thickness. Dust with castor sugar
and roll with serrated rolling pin. - Cut with the desired cutter and
bake at 180 ̊C for 12 mins. Serve.
