Makes 60 pieces


INGREDIENTS
165 gm egg whites
150 cocoa powder
750 gm almond powder
750 gm icing sugar
10 gm cinnamon powder
25 ml vanilla essence


METHOD


  1. Add almond powder in a bowl.
    Sieve in the icing sugar, cocoa
    powder, cinnamon powder and
    vanilla essense.

  2. In a separate bowl, beat egg whites
    until stiff.

  3. Fold the egg whites into the almond
    mixture and mix well.

  4. Bind the mixture together, till it


forms a stiff dough.


  1. Wrap the dough in a plastic bag
    and keep it in the chiller for an hour.
    Remove.

  2. Roll the dough into 7 mm
    thickness. Dust with castor sugar
    and roll with serrated rolling pin.

  3. Cut with the desired cutter and
    bake at 180 ̊C for 12 mins. Serve.
