7 Hold it above the bowl for a
moment to allow the excess to drain
off. Turn it back up the right way and
stick it into the polystyrene.
8 The largest bauble may droop
under the weight of the gelatine
but this is ok, it shouldn’t affect the
result. Leave the baubles to dry
overnight. Do not be tempted to
touch them – the gelatine is very

sticky and the bauble will spoil.
9 Once dry, the bauble should
sound like glass when you tap it.
Snip a tiny hole by the knot to let
the air out. If the balloon does not
come away, gently press the stick
into the bauble to help it release.
10 The balloon should come away in
tact leaving a clean gelatine bauble.
11 Using the circles stencil, lightly

airbrush some small circles around the
centre of the cake. I used the smallest
three circles for this cake.
12 Add more circles, airbrushing a
little more heavily on this second layer.
The pattern should be random, and
mostly toward the middle of the cake.
13 Continue in the same way until the
pattern is built up. Use the smallest
circle to add some darker dots ➜
