MAKE THE ROSEMARY
AND BERRIES
5 Take 30 gauge wire and cut
into short lengths (25 - 30 pieces).
Group a few at a time using small
nose pliers to bend a hook at one
end of the wire. Pass the tops of
the hooked wires through a candle
flame to ‘burn’ them and make
them black.

8 Once berries are dry and shiny
you are ready to assemble the
stems. Take one of your woody
brown wires and begin to add the
berries one by one. Starting at the
top, work your way down until you
have about fifteen berries per stem.
Repeat with the other stem and
place to one side.

10 Take a 20 gauge wire and wrap
in white florist tape to thicken
for the central stem. Mix a little
green, brown and yellow petal
dusts (you are aiming for a brown/
sage colour) with rejuvenator spirit
and paint the stem.

11 Mix garden and forest green
petal dust with rejuvenator spirit
to create a weak paint. Now paint
each rosemary leaf on the inside
only - making sure the outside of
the leaf is paler than the inside.
Once painted, group together in
threes and fours and secure with a
little white florist tape.

7 Dust berries with a combination
of red and aubergine petal dusts to
achieve a deep red colour. Leave to
one side. Take a 20 gauge wire and
cut into two medium lengths. Wrap
brown florist tape thickly around it to
create woody stems. Now dip berries
into confectioners glaze to make
them super shiny and leave to dry.

    above cake board

  • 12.7cm cm (5in) round, 2.5cm
    (1in) tall cake separator

  • 12.7cm (5in) cake card

  • 15cm (6in) cake card

  • 18cm (7in) cake card

  • cake smoother

  • flexi smoothers

  • rolling pin

  • self-healing mat

  • cake lace mat - large: hessian

  • plastic spreading knife

  • scalpel

  • ruler

  • waxed or greaseproof paper

  • small nose pliers

  • foam pad

  • 18, 20, and 30 gauge wires

  • florist tape: white and brown

  • scissors

  • steamer or kettle (PME)

  • assorted brushes

  • pins

  • non-toxic pencil

  • template (see page 17) or use a
    design of your own

  • tracing paper

  • mini circle plunger cutter

  • blossom plunger cutters
    (tiny and small)

  • small/medium posy pick

  • Dresden tool

  • blade tool


6 Roll small balls of red flower
paste, the size of peas. Dip the end
of the wire into some egg white or
edible glue and then push the red
berry on top, allowing the black
end to poke through. Repeat with
all berries and leave to firm up.

9 For the rosemary, cut multiple
short lengths of 30 gauge wire.
Knead some pastel green flower
paste and roll into a tiny ball and
place onto the wire. Then roll the
ball between your fingers until long
and thin. Use a Dresden tool or
similar to flatten the leaf and then
curve the whole stem with your
fingers. Repeat until you have thirty
to forty leaves.
