12 Take the central stem and begin
to add the cluster of leaves starting
at the top and securing in place with
white florist tape.

13 Continue down the stem to
build up the rosemary. Twist leaves
so that the darker part is facing in
and the lighter part is facing out.

15 To create the Nordic pattern
I simply searched for an image
online, printed it out and used it as
my reference. Otherwise use my
template I created from the image
overleaf. I simplified it for the cake,
you could do the same.

16 If using your own pattern,
trace with tracing paper and a
non-toxic pencil otherwise trace
from template provided. Don’t
worry about the polka dots and little
flowers being too accurate - the
tracing is more to provide you with
correct positioning on the cake.

17 Create the shapes from the left
over ivory sugarpaste. Roll out on
a well cornfloured board as thinly
as you can. For the diamonds I cut
horizontal strips, and then bisected
them with diagonal cuts. Each
strip for my template was 1.5cm
wide and cut on the diagonal every
1.5cm. Leave to one side to firm up.

14 Once all leaves are attached, go
back in with a brush and paint over the
white tape in the brown sage colour as
before. Steam the whole stem over a
kettle to set the colour, and to create
a waxy finish. Leave to dry.

18 Cut the remaining shapes.
I adapted the original template so I
could use cutters I already had.
I cut mini and small blossom flowers
and then lots of mini circles.
Make sure that the ivory sugarpaste
is rolled very thinly as you don’t
want these shapes too thick.
Check that the cut shapes fit
over your template, and that the
diamonds are accurate in size in
order to form the star shape.

19 Place the traced template
around the cake, securing in place
with pins. Now you have a choice:
you can either trace the entire
design with a cocktail stick or
pencil, or use a pin to lightly mark
the position of the stars and dots.
Work your way around the cake,
moving the template as required.

20 Remove tracing paper to reveal
a sequence of dots or a
traced image. ➜

Zoe’s Top Tip:
Make sure the covered cake
has had time to dry and firm
up before you start to press
an imprint onto it. If it is too
soft you will end up marking
the cake with your fingers.
