Turkey patties with Greek salad Soy roasted Asian greens and salmon

2 Meanwhile, to make the
Greek salad, combine all the
ingredients in a bowl.
3 Serve turkey burgers with the
tomato chutney and Greek salad.

SOY ROASTED ASIAN
GREENS AND SALMON
PREP TIME: 10 MINS
COOK TIME: 15 MINS
SERVES 2 (AS A MAIN)

2cm piece ginger, finely grated
1 Tbsp salt-reduced soy sauce
or gluten-free soy sauce
3 tsp honey
1 clove garlic, crushed
Zest of 1/2 an orange and juice
of 1 orange
1 bunch large bok choy or choy
sum, stalks chopped, leaves
cut into pieces
100g pkt fresh shiitake
mushrooms, quartered or sliced
1 red capsicum, cut into
short strips
2 x 150g pieces boneless
and skinless salmon
fillets

1-2 green shallots, trimmed,
diagonally sliced
2 tsp sesame seeds, toasted

1 Preheat oven to 200°C (fan-
forced). Line two ovenproof
dishes with baking paper.
Combine the ginger, soy sauce,
honey, garlic, orange zest and
juice in a small bowl.
2 Place the bok choy stems,
mushrooms and capsicum in one
ovenproof dish. Place the salmon
in the second dish. Spoon 3 Tbsp
of marinade over the vegetables
and 3 Tbsp over the salmon.
Cover both dishes with foil.
3 Bake vegetables for 5 minutes.
Add the salmon to the oven and
cook for a further 5 minutes. Add
the bok choy leaves to the dish
with the vegetables and spoon
the remaining sauce over.
Cover and bake the vegetables
and salmon for a further
5 minutes. Remove the salmon
from the oven (check it is cooked
to your liking) and continue to
bake the vegetables for a further
3 minutes or until tender crisp.
4 Sprinkle the vegetables
and salmon with shallots and
sesame seeds. Drizzle with any
pan juices. Serve. ➤

TURKEY PATTIES
WITH GREEK SALAD
PREP TIME: 15 MINS
COOK TIME: 10 MINS
SERVES 2 (AS A MAIN)


Turkey patties
50g wholemeal sourdough bread,
processed into crumbs
1 Tbsp light milk
250g turkey breast mince
60g egg, lightly whisked
1 /4 tsp smoked paprika
1 tsp olive oil
11 /2 Tbsp bought tomato
chutney, to serve


Greek salad
80g baby spinach leaves
250g vine-ripened tomatoes,
cut into wedges or roughly
chopped
6 Kalamata olives, halved
30g reduced-fat feta, chopped
1 /4 red onion, cut into very
thin slivers
2 Lebanese cucumbers,
chopped
Pinch dried mixed herbs


1 To make the turkey patties,
combine breadcrumbs and milk
in a bowl. Mix well. Add turkey
mince, egg and paprika. Mix until
well combined. Shape into 6 small
patties. Heat oil in a large non-
stick frying pan over medium
heat. Add patties and cook for 3
minutes each side or until cooked.
