Are you an oven lover?
Don’t have a slow cooker on hand?
Don’t despair you can still cook up
these delicious recipes. Soups can be
cooked on top of the stove; just keep
an eye on the liquid content, as you
will need to increase that slightly.
With casseroles, simply cook in an
oven preheated to 150°C (fan-forced)
for about 3 hours, or until the meat or
poultry is very tender. You will also need
to increase the liquid by about half.


COOK ONCE, EAT TWICE
Most slow-cooked recipes yield much-appreciated
leftovers. Right after the meal, transfer the extra food
to freezer containers and freeze for up to six months.
Thaw in the refrigerator or microwave.

PUT IT TO THE TEST
To check that your slow cooker is
working and safe to use, fill it half to
three-quarters with water. Heat the
water, covered, on the low-heat setting
for 8 hours. Check the water temperature
with an accurate food thermometer.
If it doesn’t register around 85°C,
then it’s time to buy another cooker.

Follow the heat setting and timing
specified in each recipe. As a rule of
thumb, if a recipe calls for the low-heat
setting, it may also be cooked on the
high-heat setting for half the time.
