Spicy, slow-cooked
Mexican-style
casseroles, soups
and stews benefit
from a generous
crown of fresh salsa.
In a bowl combine
4 deseeded and
chopped tomatoes,
1 finely chopped small
red onion, ¼ cup
chopped coriander
and 1 deseeded and
finely chopped small
red chilli. Season
with freshly ground
black pepper.

Pep up the colour,
crunchy texture and
nutritional content
of any slow-cooked
casserole with this
fat-free eye candy.
To prepare, simply
chop equal amounts
of red capsicum,
carrot and flat-leaf
parsley, then toss
lightly.

You don’t even need
a recipe to whip up a
batch of this terrific
topper. Just combine
chopped fresh fruit,
such as pineapple,
strawberries and
kiwifruit, with lime
juice and a bit of
finely chopped fresh
chilli to taste. Add
chopped red onion
and capsicum if you
like. Use it to top
slow-cooked poultry
and meat dishes.

Super-thin slices
of fresh chilli bring
pizzazz to mellow
slow-cooked dishes.
Use them judiciously
to float on soups,
stud stews and even
embellish casseroles
and meat dishes. To
reduce the spiciness
factor, use a paring
knife to remove
the seeds and
membranes
before using. ■
