BEEF AND
POTATO CURRY
PREP TIME: 20 MINS
COOK TIME: 1 HOUR 40 MINS
SERVES 4 (AS A MAIN)

600g gravy beef, trimmed of fat,
cut into 2cm pieces
2 tsp garam masala
1 tsp ground cinnamon
2 cloves garlic, crushed
2 tsp olive oil
6 cardamom pods, crushed
1 cinnamon stick
165ml can light coconut milk

125ml (½ cup) salt-reduced
beef stock or gluten-free stock
125ml (½ cup) water
500g Spud Lite Potatoes, cut into
small chunks
2 carrots, cut into small chunks
100g green beans, diagonally halved
200g broccoli, cut into small florets
2 tsp brown sugar
Coriander leaves, to serve (optional)

1 Toss the beef, garam masala,
ground cinnamon and garlic in
a medium bowl. Heat the olive oil
in a medium heavy-based

saucepan over medium heat. Add
the beef and cook, stirring, for 2
minutes or until it changes colour.
2 Add the cardamom pods,
cinnamon stick, coconut milk,
stock, water, potatoes and carrots
to the pan. Cover and bring to
a simmer over medium heat.
Reduce heat to low and simmer,
covered, for 11⁄4-1½ hours or until
the beef is very tender.
3 Stir the beans, broccoli and sugar
into beef. Cover and cook for a
further 5 minutes. To serve, top
with coriander leaves (if using). ■
