1 bunch green shallots, trimmed
1½ cups tricolour quinoa
3 bunches (950g) Asian greens,
trimmed, steamed, to serve
Lemon wedges, chopped chilli
and coriander sprigs, to serve

1 Place first seven ingredients
(through peppercorns) in a large,
deep saucepan with half shallots.
Cover with plenty of cold water.
2 Bring saucepan to boil over
high heat. Boil for 5 minutes,
skimming surface several times
to remove fat and any floating
sediment. Remove pan from heat.
Cover with lid. Set aside for 1 hour.
Carefully remove chicken from
broth and place on clean board.
Set aside to cool slightly.
3 Remove chicken meat from
bones; keep chicken meat in large

HAINANESE-INSPIRED
CHICKEN
PREP TIME: 20 MINS (PLUS RESTING)
COOK TIME: 1½ HOURS
SERVES 6 (AS A MAIN)


1.8kg chicken, skin and all excess
fat removed
6 rashers Weight Watchers bacon,
roughly chopped
1 Massel salt-reduced stock cube
1 brown onion, finely chopped
10cm piece ginger, sliced
8 cloves garlic, peeled, sliced
1 tsp Sichuan peppercorns

Strain broth, discarding solids.
4 Wash and dry saucepan used to
cook chicken. Return broth to pan
and bring to a rapid boil over high
heat. Continue to boil until mixture
reduces to 2.25L (9 cups).
5 Put 750ml (3 cups) broth and
quinoa in medium saucepan. Bring
to boil over high heat. Boil until
craters appear. Cover and remove
from heat. Set aside for 10 minutes.
Use fork to fluff up. Separate grains.
6 Slice chicken meat and finely
slice remaining shallots. Serve with
quinoa, broth, Asian greens, lemon
wedges, chilli and coriander.

COOK’S TIP
Peel garlic cloves easily by crushing
them with the flat of a knife and the
palm of your hand. ■
