2 00g tub cottage cheese
5 eggs
2 corn cobs, kernels
removed
1 00g baby spinach leaves,
chopped
2 tbs chopped fresh chives
250g cherry tomatoes
100g baby rocket leaves


1 Preheat oven to 180°C.
Spray four 1-cup (250ml)
capacity baking dishes with
oil and line the bases with
baking paper.
2 Whisk the cottage cheese
and eggs in a bowl until
combined. Stir in the corn,
spinach, and 1 tablespoon
chives and season with salt
and pepper.
3 Divide the mixture evenly
between the prepared baking
dishes. Bake for 30 minutes
or until set and golden.
4 Meanwhile, line a baking
tray with baking paper. Place
tomatoes on the prepared
tray. Bake for 15-20 minutes
or until soft.
5 Leave the frittatas in the
dishes until cool enough
to handle. Run a small knife
around the insides of the
dish to loosen the frittatas.
Remove paper. Serve
frittatas with the tomatoes
topped with the remaining
chives and rocket.
