Cook’s note
Transport salad and
dressing separately.
Add dressing just
before serving to
keep salad crisp.

4 celery sticks, cut into matchsticks
3 baby cos, leaves torn
1 large red apple, cored, thinly sliced
½ cup fresh flat-leaf parsley leaves
2 tbs dried cranberries
⅓ cup (40g) pecan nuts, chopped
¼ cup (60g) 99% fat-free plain yoghurt
3 tsp lemon juice
1 tsp Dijon mustard

1 Combine celery, cos, apple, parsley, cranberries and
pecan nuts in a large bowl.
2 Combine yoghurt, lemon juice and mustard in a jar.
3 Drizzle salad with dressing and gently toss to combine.

value for 100g grilled chicken per serve.
