Skewer 4 cubes of
watermelon and 4 x 1cm
(20g) cubes reduced-fat
feta onto 4 toothpicks.
Sprinkle with pepper.

MOROCCAN BABY CARROTS
Lightly spray 1 bunch baby carrots with olive
oil and sprinkle with 1 tsp Moroccan spice
mix. Bake in a 200°C oven for 15 mins. Serve
drizzled with 2 tsp lemon juice and sprinkled
with torn fresh mint leaves.

Steam or chargrill ½ bunch asparagus
drizzled with 1 tsp olive oil and sprinkled
with 1 tsp grated parmesan cheese.

WARM MARINATED
OLIVES
Combine 10 (30g) pitted kalamata
olives with 1 tsp olive oil, 1 piece
lemon rind and 1 small garlic clove
(sliced) in an ovenproof dish. Bake
for 15 mins in a 180°C oven. Cool
slightly and stir through 1 tsp
chopped fresh flat-leaf parsley.
