LINGUINE WITH TUNA, TOMATOES & CAVOLO NERO

1 Cut 2 zucchini into zoodles using a spiraliser. Cook 120g dried linguine pasta in a large saucepan of boiling salted water following packet instructions or until
just tender, adding zoodles for last 2 minutes of cooking time. Drain, reserving ¼ cup (60ml) of pasta cooking water. Return pasta mixture to pan. 2 Meanwhile,
heat 2 tsp olive oil in a large non-stick frying pan over high heat. Cook 250g cherry tomatoes, stirring, for 2-3 minutes or until tomatoes start to soften. Add
100g cavolo nero (chopped) and cook, stirring, for 1 minute. 3 Add 400g can tuna in springwater (drained, flaked), 170g jar artichoke hearts in brine (drained,
quartered) and ½ cup (75g) pitted kalamata olives and toss until heated through. 4 Add tuna mixture and reserved pasta cooking water to pasta mixture. Toss
