PLUM & CHILLI TURKEY SAN CHOY BOW

1 Cut 2 carrots and 2 Lebanese cucumbers into zoodles using a spiraliser. Heat a wok over medium-high heat. 2 Add 2 tsp sesame oil and
swirl to coat. 3 Stir-fry 500g lean skinless turkey breast fillets (cut into strips) for 2-3 minutes or until lightly browned. 4 Add ¼ cup (60ml)
plum sauce and 1 tsp sambal oelek and stir-fry for 1-2 minutes or until turkey is cooked through. 5 Place 8 baby cos lettuce leaves on serving
plates. Top with combined carrot and cucumber zoodles. 6 Divide turkey mixture among lettuce leaves. SERVE WITH 0 SmartPoints value
bean sprouts and finely chopped unsalted roasted peanuts. Add 2 SmartPoints values for 2 tsp chopped peanuts per serve.
