handful baby spinach, ½ cup cooked
broccoli florets and 2 tbs chopped fresh

a large bowl. Add ¾ cup cooked quinoa,
100g skinless lean cooked chicken breast
(shredded), 1 cup baby rocket leaves, 1
celery stick (sliced) and 1 carrot (coarsely
grated) and toss to combine.

with 2 tsp lime juice and 1 tsp olive oil.
Sprinkle with fresh coriander sprigs.
