them is to use everything, as in this recipe
for chilled cucumber soup.
Peel1Lebanesecucumberintolong
strips,reservingpeel.Chopfleshandchill
peel until needed. To make the chilled
soup, in a blender, whiz cucumber flesh
with1cupGreekyoghurt,^1 / 2 small
avocado,1tbsapplecidervinegar,finely
gratedzestof1lemonandjuiceof^1 / 2 a
lemon,^1 / 2 clove finely chopped garlic,
2choppedspringonions,^1 / 4 tsp finely
chopped chilli, 2 tbs finely chopped
parsley,1tbschoppedtarragonand2tbs
extravirginoliveoiluntilsmooth.Season
andchillovernighttodevelopflavours.
Whenreadytoserve,patreserved
cucumber peel dry with paper towel and
grillinahotchargrillpanuntilcrispand
charred, then season. Serve soup with
crispycucumber,adrizzleofextravirgin
olive oil and extra chopped avocado.

dry as possible, as moisture can
encourage mould growth. Store
themwrappedinpapertoweland

should keep for 5-7 days.

In aworld-first,Qantasisworkingto
combatthedisruptiveeffectsoflong-haul
travelonourbody’scircadianrhythms,aka
jetlag. As the airline launches its first Boeing
787DreamlinerflightfromPerthtoLondon
this month, they’ve teamed up with the
University of Sydney’s Charles Perkins
Centre to reshape the travel experience.
“Ourpartnership will examine everything
fromreducingtheimpactofjetlag,through
to health, nutrition and sleep through the
entire journey, from the lounge to the
cabin,”saysQantasGroupCEOAlanJoyce.
The Dreamliners have game-changing
features, including higher humidity to
combat dehydration – the enemy of
wellbeingwhenyou’reintheair–plus
new coloured lighting, sound effects
andmealandsleepschedules.

&BeverageCreativeDirector.Hisnew
anti-jetlagmenuincludesbreakfastbowls
loaded with grains, seeds, supergreens and
healthyproteins;andsleep-promoting

to calm the parasympathetic nervous
system). His ‘Quench’ program encourages
rehydrationthroughkombucha,herbal teas,
freshjuicesandflavouredwaters.
This all sounds great, but does it mean
wecannolongerenjoyaglassofwine after
take-offif we want to avoid jetlag?
“I would hate to fly to London without
atleastthreeglassesofwine;itwouldbea
