winnerDiana Chancreates a stir-fry that unites
noodles, veg and beef for a fast and tasty dinner.

JAPCHAE WITH TERIYAKI BEEF
SERVES 2

(^1) / 3 cup (80ml) light soy sauce
2 tbs mirin
1tbssesameoil
(^1) / 2 tsp ground white pepper
250gporterhouse steak, thinly sliced
200g sweet potato glass noodles
(from Asian food shops)
(^1) / 2 cup (125ml) sunflower oil
2 eggs, lightly beaten
2garliccloves,thinlysliced
1onion,thinlysliced
1 red capsicum, cut into wedges,
seeds removed
100gshiitake mushrooms, halved
1carrot,shredded
100g baby spinach leaves
Toas tedwhitesesameseedsand
baby shiso leaves, to serve
Combinesoy,mirin,sesameoil,pepper
andbeefinabowl.Marinatefor5minutes.
Removesteak.Setitandmarinadeaside.
Meanwhile, cook glass noodles
according to packet instructions, then
drain and rinse under cold water until cool.
Heat2tbssunfloweroilinawokover
high heat. Add egg, swirling to coat wok.
Cookfor3minutesoruntiljustset.Transfer
toachoppingboard,rollandthicklyslice.
Returnwoktohighheat.Addsteak
and2tbssunfloweroil.Cook,stirring
constantly,for2minutesoruntilrare.Add
marinade.Cookfor1minuteuntilreduced
slightly.Transfertoabowl.Returncleaned
woktohighheatwithremaining2tbs
sunflower oil. Add garlic and cook for
30secondsoruntilcrispy.Removewith
aslottedspoonandsetaside.Addonion
andcook,stirring,for2minutesoruntil
softened. Add capsicum, mushroom and
carrot,andcook,stirring,for2minutesor
untilsoftened.Addspinach,noodlesand
steakmixture.Stiruntilheatedthrough.
Tr an s ferto serving bowls. Top with
omelette and garlic, and sprinkle over
sesame and shiso to serve.

NOODLES ARE ONEofmyfavouriteingredients.They’rejustsoversatile:youcan
fry them, have them in soups, toss them through salads, or even steam them, like you
would have at yum cha. Here, I’ve used them to create a quick and easy stir-fry that’s
perfectasamidweekdinner.
JapchaeisaKoreandish,anditsnamemeans‘mixtureofvegetables’–which
describesboththedishandthemethodinwhichit’sprepared.Tocreatejapchae,
glassnoodlesmadefromsweetpotatostarcharestir-friedinsesameoilwithbeef
andthinlyslicedvegetables,thenseasonedwithsoysauceandatouchofsugar.
IstumbledonthedishyearsagoinKoreaTowninNewYork,ata(nowdefunct)
placecalledKristalbelli.Irememberhowtastyitwas,anditwasoneofthefirstthings
IcookedwhenIgotbackhome.Itwasservedasasidedishthen,buthereI’vemade
itintoamain.You’llnoticethatIusethesamewoktocookallelementsofthisdish.
I’mallaboutno-fusscooking;thelesspotsandpansused,thebetter.Ihopeyouenjoy
my rendition ofjapchae,and that it becomes part of your weeknight dinner roster.
