½ cup (80g) frozen corn kernels
1 cup (210g) canned black beans, rinsed, drained
50g baby rocket leaves
100g cherry tomatoes, halved
1 small Lebanese cucumber, cut into ribbons
½ red capsicum, chopped
2 radishes, spiralised
185g can tuna in springwater, drained, flaked
2 tbs chopped fresh coriander
1 tbs lime juice
2 tsp olive oil
½ tsp Mexican chilli powder

1 Place corn in a heatproof bowl and cover with boiling water. Stand
for 2 minutes, then drain. Refresh under cold running water. Drain.
2 Combine corn, black beans, rocket, tomatoes, cucumber,
capsicum, radishes, tuna and coriander in a large bowl.
3 Whisk lime juice, olive oil and chilli powder in a small bowl. Add
dressing to salad and toss to combine.

ADD IT Avocado. Add 2 SmartPoints value for ¼ small avocado
(25g) per serve.
