SPANISH RICE & BEANS WITH CHORIZO

1 Heat a large deep non-stick frying pan over medium-high heat. 2 Stir-fry 1 (148g) chorizo (thinly sliced) for 2-3 minutes or until crisp. Set
aside. Meanwhile, heat a 250g packet 90-second microwave brown rice in microwave following packet directions. 3 Add 150g baby spinach
leaves and 1½ tbs taco spice mix to pan and cook, stirring, for 1 minute or until spinach just wilts. 4 Add rice, 400g can red kidney beans
(rinsed and drained), 125g roasted capsicum strips (not in oil) and chorizo and cook, stirring, for 2 minutes or until heated through. Serve
with lime wedges. SERVE WITH 0 SmartPoints value salad of chopped tomato, capsicum and cucumber and fresh coriander leaves,
